Questions

How much smaller will my file get?
It depends on what is inside. A PDF of scanned photographs can lose most of its size, while one that is mostly words may barely move. The result shows the exact figure.
Will the text still be selectable?
With Lossless, yes, and search still finds words. Smaller and Smallest turn every page into a picture, so selecting, copying and searching stop working, and so do links.
Which setting suits a scan?
Smaller. A scan is already a picture, so it loses little you would notice on screen and saves a lot. Keep Smallest for when a hard size cap has to be met.
